Peaches and tomatoes tonight, tomorrow, to savor later.
Three recipes pairing peaches and tomatoes during the height of their season.
Tonight
Grilled Peach and Tomato Caprese Salad
serves 4
2 large heirloom tomatoes
2 semi-ripe yellow peaches
8 oz fresh mozzarella
8 fresh basil leaves
1cup balsamic vinegar
1cup sugar
1/2 shallot
1 clove garlic
1/2 cup Canola Oil
Tomorrow
Peach and Tomato Salsa
makes 3 cups
1 med heirloom tomato
1 semi-ripe yellow peach
1 small red onion
1 red pepper
1 yellow pepper
4 oz fresh lime juice
1 tbls. chopped fresh cilatro
1 tbls. chopped fresh mint
1 tbls. chopped fresh basil
To Savor Later
Peach and Tomato Mostarda
makes 1 quart
2 med heirloom tomato
3 semi-ripe yellow peach
1 small yellow onion
1/4 cup apple cider vinegar
1/4 cup whole grain mustard
1/4 cup sugar
1/4 cup water
